Italian Tomato and Bread Salad

An easy salad with fresh tomatoes and crusty bread. Add some fresh herbs and Maleny Cuisine Italian Style Dressing for a delicious low sodium, low fat salad.

Low sodium, low fat, egg free (gluten free if using gluten free bread.)


4 slices of crusty bread

1 tablespoon balsamic vinegar

3 tablespoons Maleny Cuisine Italian Style Dressing

1 teaspoon Dijon Mustard

A garlic clove, crushed

Pepper

120g Baby Spinach Leaves

1 cup cherry tomatoes, halved

Half a small red onion, thinly sliced

A handful of fresh parsley and basil

100g feta cheese, crumbled

Optional – olive oil

Serves 4 as a side salad

Lightly brush both sides of the bread with olive oil. Grill the bread on both sides until lightly toasted. Remove the bread from the grill and tear into bite size pieces. Set aside.

In a large bowl mix the balsamic vinegar, Dijon mustard, crushed garlic and the Maleny Cuisine Italian Style Dressing. Mix well. Optional: add a drizzle of olive oil.

Add the spinach, cherry tomatoes and onion to the dressing. Toss together well and crush up some of the tomatoes into the dressing. Tear the parsley and basil leaves and add to the salad mix.

Place the grilled bread into the bowl with the salad. Toss lightly.

Arrange the salad on a serving platter and sprinkle with the feta cheese.

Lamb and Savoury Eggplant Chutney Pizza

This delicious Mediterranean inspired pizza ticks all the flavour and health boxes.
Low fat, low sodium, egg free, gluten free (if using gluten free base)


For the Pizza

200 grams lamb mince

1 cup of diced cherry tomatoes

100g frozen spinach

½ cup Maleny Cuisine Savoury Eggplant Chutney

1 cup reduced fat mozzarella cheese

Preferred pizza base: traditional dough or gluten free (pita pockets or wraps also work well)

For the Yogurt topping

½  cup of reduced fat Greek yogurt

¼ cup of chopped mint and parsley 

2 teaspoons of Maleny Cuisine Sweet Mustard Dressing.

Serves 4

Pre- Heat oven to 250oC, with a pizza stone in it.

Prepare your pizza base to the package instructions.

In a medium hot pan, fry lamb mince until browned, then drain in a sieve for a couple of minutes to reduce the fat of the meat. Thaw out the frozen spinach and leave to drain squeezing any extra liquid out.

Cover your pizza base with the Maleny Cuisine Savoury Eggplant Chutney, and top with the cooked lamb mince, spinach and cherry tomatoes, with a final layer of grated cheese.

Place on pizza stone and bake 10 min until crispy and cheese is golden.

To make to yogurt topping combine the yogurt, herbs and Maleny Cuisine Sweet Mustard Dressing

Drizzle yogurt topping on pizza once cooked and serve immediately.

Sweet Chilli and Ginger pork dumplings

Sweet Chilli and Ginger pork dumplings

Add a little spice to these simple little dumplings with Maleny Cuisine Sweet chilli and Ginger sauce. Perfect steamed on their own with some extra sauce on the side or poached in your favourite Asian style soup. This will work well with Gluten free wonton wrappers also.

Low salt, Egg free, Low Fat, Dairy free


Ingredients

1 tsp grated ginger

1 clove garlic, crushed

½ cup of Chinese cabbage, shredded

250g pork mince

1 spring onion, finely chopped

1 tsp sesame oil

2 tablespoons of Maleny Cuisine Sweet Chilli and Ginger Sauce plus extra to serve

12 wonton wrappers

Heat a dash of vegetable oil over medium heat. Cook ginger and garlic for one minute, before adding the cabbage and a splash of water. Stir fry for 2-3 minutes or until cabbage wilts. Remove to a bowl and set aside to cool. Stir in pork mince, spring onion, sesame oil and Maleny Cuisine Sweet Chilli and Ginger Sauce. Mix until well combined. Season to taste if needed. 

Place a tablespoon of the pork mixture on each of the wonton wrappers. Using water moisten the outside edges of the wrapper with your finger or a pastry brush. Fold wrapper over and pinch edges together.

Use a bamboo steamer with baking paper lining the base over a pot of boiling water. Steam 6 of the dumplings for 6-10 minutes until cooked. Repeat with the rest of the dumplings.

Serve with the extra Maleny Cuisine Sweet Chilli and Ginger Sauce or Maleny cuisine Thai style Salad Dressing as a dipping sauce.
